Made from 100% Dolcetto grown on calcareous clay soils, the grapes are hand-picked in mid to late September, fermented on the skins for four to six days at a controlled 24-26°C, then aged three to four months in steel to preserve the fruit.\u003c\/p\u003e\u003cp\u003eIt shows a ruby red colour with violet hints. The nose is fresh and fruity, with cherry and plum, and the palate is dry and harmonious with the pleasant bitter-almond finish that is the hallmark of good Dolcetto. At 13% ABV, with soft tannins and modest acidity, it is easy to drink and ready now.\u003c\/p\u003e\u003cp\u003eServe lightly cool at 16-18°C. It is a versatile table wine for simple starters, salumi, pizza, pasta and risotto, and tajarin with meat ragù is the classic Langhe pairing. Despite the name, which suggests \"little sweet one\", the wine is fully dry.\u003c\/p\u003e\u003ch4\u003eAbout the producer\u003c\/h4\u003e\u003cp\u003eTerre del Barolo is a growers' cooperative based in Castiglione Falletto, founded in 1958 by local schoolteacher and mayor Arnaldo Rivera. Today around 300 member growers farm more than 600 hectares across the eleven villages of the Barolo appellation, and every wine is made exclusively from Langhe grapes.
